Pumpkin Bread and Muffins

For the next autumn weekend, savor the taste as well as aroma of the quintessential autumn vegetable, pumpkin, in the form of bread and muffins. The greatest thing with this recipe is it produces an excellent textured batter which will either end up as bread or as muffins.

The presence of chocolate chips or walnuts on the batter nicely adds crunch to the finished treats.

You could appreciate pumpkin muffins or mini pumpkin loaves while you are having a cup of toasty chocolate or perhaps dark coffee for a frosty fall morning, or an ice cold fruit juice for a refreshing goodness. Both ways can make you go crazy over these fall desserts.

This recipe can make approximately 12 muffins, 3 little loaves, or 1 large bread.

What you'll need:

1 3/4 cup (1 15 oz. can) pureed pumpkin, 1 1/2 cup brown sugar, 1/2 cup (1 stick) butter, softened, 3 eggs, 3-4 cups all-purpose unbleached flour, two tablespoons baking powder, 1 teaspoon ground cinnamon, 1/2 teaspoon salt, 1/2 teaspoon ground nutmeg, two cups chopped walnuts or chocolate chips,

Instructions:

Preheat the oven to 350 degrees F. Prepare muffin tins or mini loaf pans by carefully coating them.

In the huge mixing bowl, stir together pumpkin, brown sugar, butter, and eggs. Whisk right until creamy. With a different container, blend simultaneously all of the dry ingredients except for the nuts or chocolate chips.

Take out 3 cups from the blended dry ingredients and then stir into the wet ingredients. Add another cup or more of the dry mixture as desired to attain the perfect texture. Batter really should be moist, but dense enough for a spoon to withstand it.

Toss in nuts or chocolate chips and stir consistently.

Dispense or maybe spoon the batter into the prepared muffin tins or bread pans. Place on the middle rack and bake in pre-heated oven until eventually a stick inserted in the center comes out dry and clean. If you're preparing pumpkin muffins, bake them for approximately 20-25 minutes. For small pumpkin loaves, bake for 25 to 30 minutes, while for huge sized bread, bake any where from 50 minutes and 1 hour.
